Spring has arrived at Le Calandre in dishes like Egg ricotta with oyster cream, caviar, raw lobster and asparagus or Crispy egg with tuna belly. Among first course Safron, licorice and chorizo risotto with asparagus consommé or Black rice fettuccine with asparagus, bottarga and mackerel sauce. Among second dishes try Red mullet biscotto with zucchini, basil and sea urchin sauce or Turbot with hazelnuts, capers and coffee. Finish on the sweet note with Nocellara olive oil sponge cake with chickpea pollen meringue and chamomile hops gelato or Illuzion (chocolate game 2019).
