Inspired by seasonal ingredients, the Le Calandre menu is map of Max Alajmo’s culinary journey. Guests may choose from three tasting menus - "Classico," "Max" and "Raf" - or decide to create their own menu of 2, 3 or 4 courses selecting dishes from the tasting menus. You can choose among Max’s classics such as Cuttlefish cappuccino, saffron and licorice risotto, Charred bone marrow, or seasonal dishes like roast pork with chicories, mustard foam and coffee powder, risotto with olive oil, green radish, citrus, smoked eel and miso powder or venison in dark bread, thyme and cumin crust, vegetable and black truffle mille feuilles and civet sauce. Among dessert try warm gianduia and sage woup and black truffle gelato or puffed ravioli with lemon cream and chokeberry sauce.
