Mamma Rita's Pazientina

Padova, a charming Italian city with a rich culinary heritage, is home to a delightful dessert whose name tells a story of patience and passion. Allow us to introduce you to La Pazientina, a sweet treat that has captivated the hearts and taste buds of many. But La Pazientina isn't just any dessert; it's a labor of love, a masterpiece crafted by chef Rita Chimetto, a dedicated mother to Massimiliano, Raffaele, and Laura Alajmo.

The Origin Story

La Pazientina's journey begins with a fascinating twist. In the 1990s, Dr. Cuoghi from the Academy of Culinary Arts approached Rita Chimetto with a unique challenge: to study a historic document from the 1600s describing the cake. The catch? The pamphlet listed the ingredients but omitted the actual recipe for this mysterious dessert. Rita, undeterred by the lack of a complete recipe, accepted the challenge with open arms. She was determined to unlock the secrets of La Pazientina, and with a touch of creativity and a dash of culinary magic, she embarked on her own interpretation of the dessert.

The Creation of an Original Recipe

With remarkable skill and unwavering dedication, Rita Chimetto embarked on a journey of rediscovery. She carefully experimented with the available ingredients, paying attention to every detail, and in doing so, crafted her own unique interpretation of La Pazientina. It was a true labor of love and a testament to her culinary prowess.

The Official Recipe

Rita's version of La Pazientina was so exceptional that it was officially recognized as the authentic recipe. A notarial deed was drawn up in Padova, solidifying her interpretation as the official one. This recognition pays homage to Rita's passion for the culinary arts and her commitment to preserving the heritage of this delightful dessert.

The details

La Pazientina boasts a double layer of Brescian pastry, a rich and creamy zabaglione filling, and a sponge cake soaked in Grand Marnier. To elevate the experience even further, it's generously coated with decadent chocolate and a layer of gianduia.
